Vanilla shortbread jenga



Vanilla shortbread jenga

Ingredients:
100 g icing sugar
200 g plain flour
100 g cornflour
200 g very soft unsalted butter
Seeds from 1 vanilla pod

1.      Preheat the oven to 160 degrees.
2.      Mix together the icing sugar, plain flour and cornflour.
3.      Add to it the soft butter and vanilla seeds. You can use the food processor to mix it together; I used my hand to combine it all.
4.      For a soft ball.

5.      Put it into a Swiss roll tin and with your fingers press gently to form even layer of pastry.


6.      Using a sharp knife cut the shortbread into fingers. I had 2 lines lengthwise and 10 cuts down.


7.      With a fork make holes in the shortbread.
8.      Bake for 20 – 25 minutes.
9.      Let it cool down before removing from the tin.
