Fresh nettle soup



Fresh nettle soup
Nettle grows all year round, but Spring is the best time to collect it


Ingredients:
3 handfuls of fresh nettle
1 leek
1 big onion
3-4 medium potatoes
2 carrots
1 parsnip
¼ of celeriac
4-5 garlic cloves
½ tsp of nutmeg
2 tbsp of butter
Sea salt
Black pepper
Handful of lovage (fresh or dry)
·         Optional fresh cream or plain yogurt for serving
·         Parsley or dill for serving


1.       Chop the nettle. You might need to wear gloves.
2.       Chop the onion, garlic, leek, potatoes, parsnip and carrots.
3.        Heat the butter in the pot, add onion, garlic and leek and fry for few minutes, then add potatoes, carrots and parsnip.
4.       Stir it, add celeriac, and cover with 2 liters of boiling water.
5.       Add salt, nutmeg, pepper and boil on medium heat for 10 minutes.
6.       Add nettle and lovage and continue cooking on low heat for 10-15 minutes.
·         You can serve with dollop of fresh cream or plain yogurt, chopped parsley or dill or with fresh bread or toast.

Fresh nettle is great sours of iron; it cleans kidneys and strengthens whole body.
