YEAST KITTENS BAPS

Ingredients:
500g white spelt flour
30g fresh yeast
300 ml milk
60g soft butter
100 g Demerara sugar
2 tsp of natural vanilla extract
Pinch of sea salt
50 g of sultans (for decoration)
Almond flakes (to make kittens whiskers, teeth and eyebrows)
Milk for decoration

1.       Mix together the yeast, 2 tbs of flour and 75 ml of warm milk.
2.       Cover it in a bowl and leave in a warm place for 20 minutes.
3.       With a hand mixer mix soft butter with sugar, add vanilla extract.
4.       In another bowl combine together flour and salt. Add to it yeast mixture and butter and sugar mix, add remaining 225 ml of warm milk. Knee it for around 10 minutes to make dough.
5.       Cover the dough and leave it in a bowl in warm place for 40 minutes.
6.       After that time knee it again and divide into 16 parts.
7.       Make the info a round shape, then flatten a bit and with scissors cut the ears of the kittens.
8.       Preheat the oven to 170 degrees.
9.       Transfer the kittens onto the baking tray (covered with a baking paper) 2-3 cm apart. Decorate them with the sultans as the eyes, and almond flakes as whiskers and eyebrows.
10.   “Paint” them with a milk and put into the oven for 10 minutes,  or longer if  they’re not ready.
11.   Take out when they get lightly brown colour.
