ELDEFLOWER SYRUP
elderflowers are in season from the end of
May to the beginning of June
Ingredients:
Around 40 elder flower umbels
2 litre of water
1-2 kg of brown sugar (depend how sweet you want it to be)
Juice from 5 lemons
1. Separate flowers
from the green part. I used scissors to do it.
2. Pour on them
hot, boiling water and leave it like that for overnight.
3. Next day drain
it, add sugar, lemon juice and boil on low heat until sugar dissolves.
4. When it starts
to boil remove from heat and pour info sterilized bottles/jars.
5. If you choose
jars close them and put “upside down”. Bring back to normal position after it
cools down.
Elderflower syrup helps
our immune system, it fights viruses, infections and it’s a natural painkiller.
In winter time you can drink
it with tea or with water as lemonade.
