WHITE BEAN SOUP



WHITE BEAN SOUP
For babies age 8 months (breasted)
Or 7 months (formula fed)



Ingredients:
Cup of white beans
1 medium red onion
Knob of butter
1 big carrot
1 parsnip
Half of leek
Small piece of turkey breast

1.       Leave the beans soaking in water overnight.
2.       In a pot heat up the butter and fry chopped onion until lightly golden.
3.       Add chopped leek, carrot and parsnip.
4.       Fry it all for another couple of minutes, then add turkey breast (if fresh chop it into small pieces, if frozen chop when its cooked and put back to the pot before blending the soup) and drained beans.
5.       When vegetables are soft to them with boiled water and continue cooking on low heat for 30 minutes or longer if beans are still hard.
6.       Blend it before serving.
