Banana bread



Banana bread


Ingredients:
110g of soft butter
190g caster sugar
2 large eggs
240g self raising flour
1 tsp baking soda
1/2 tsp of vanilla extract
3 large bananas




1.     Preheat the oven to 180 degree.
2.     Cream the sugar and butter in a bowl with a hand held mixer until light.
3.     Add 1 egg and a bit of flour and continue mixing, repeat the same with 2nd and 3rd egg until we use all the flour.
4.     Add baking powder and mix everything until smooth.
5.     Peel the bananas and mash them with a fork.
6.     Add them to the bowl with vanilla extract and mix again.
7.     Pour the mix into greased loaf tin and place in the oven for 50-60 minutes.
8.     You can cover it with tinfoil after 25 minutes to stop it browning too much on top.
9.     Insert a skewer into the centre of the loaf and if it comes out clean the banana bread is ready.
