WILD ELDERBERRY AND LAVENDER JAM



WILD ELDERBERRY AND LAVENDER JAM


Ingredients:
400g of elderberries
200g brown sugar
Juice from half of lemon
2 lavender flowers



1.     Separate the berries from the green part. I used scissors to do it.

2.     Add sugar, few table spoons of water, lemon juice and lavender flowers with stems if you want take them out later on, or without stem if you want to leave lavender in the jam.
3.     Heat on medium heat until berries burst and water reduce to jam like consistency. 
4.     I used a hand blender to make my jam, but you could use sieve to make yours.
5.     Still hot transfer to sterile jars, close the lids and boil in a pot with hot water (3/4 height cover with water) for 20 minutes. This is pasteurization.
