Spicy Tofu Soup



Spicy Tofu Soup

Ingredients:

Knob of butter

Half onion

Half leek

2 tbsp of curry paste

1 tbsp of grated ginger

800 ml of vegetable broth

300ml of coconut milk

350g of tofu

Approx. 350g of vegetable mix (fresh or frozen)




1.    Preheat the butter in a big pot, add chopped onion and leek. Fry for 5min then add curry paste and grated ginger.

2.    After couple of minutes add broth and coconut milk.

3.    Bring it to boil and add vegetable mix and sliced tofu.

4.    Cook for another 5min on medium heat.
