VEGAN CABBAGE STEW





VEGAN CABBAGE STEW


Ingredients:
Half of any type of cabbage
½ kg of Sauerkraut
150g of dried prunes
1 onion
1 carrot
1 parsnip
2 garlic cloves
Couple of tbs of tomato paste
Couple of tbs of olive oil
Pepper, salt
Few bay leaves
Allspice
Juniper
2-4 tbs of dried lovage

1.       Wash and peel all of the vegetables. Chop garlic and onion, and grate the carrot and the parsnip.
2.       In a big pot heat up the olive oil, add the garlic and onion and couple of minutes later carrot and parsnip. Mix together.
3.       After couple of minutes add 2 cups of water and add chopped fresh cabbage, sauerkraut and all the herbs and spices and mix together.  Cover the pot and cook on low heat for couple of hours, stirring from time to time.
4.       Meantime add prunes cut in half and tomato paste.
5.       Season with spices.
