Homemade “Lazy” Pasta


Ingredients:
200 g full fat cottage cheese
1 free range egg
Half cup of flour
15 g of vanilla sugar
Pinch of salt

1.     Mix the egg until egg yolk and egg white combine together.
2.     Smash the cottage cheese through the fork, add the flour, the egg and the vanilla sugar.
3.     Knead the dough.
4.     Form slim “strings” and cut into small pasta 2-3cm thick. See on the photo.

5.     Boil the water with a pinch of salt. Add the pasta, mix to separate them from each other and boil for approx. 2 minutes until they appear on the surface of the water.
6.     Serve while still warm.  You can serve with a bit of butter.

HOMEMADE WHOLEMEAL BREAD



INGREDIENTS:
 
500 g wholemeal flour
8 g of dry yeast OR 25 g of fresh yeast
2 cups of warm water
1 tbsp of salt
1 tsp of sugar

1.      Mix together flour and yeast, salt and sugar.
2.      Add water and knead the dough for a while.
3.      Cover and leave in warm place for 1h.
4.      Transfer the dough to baking tin, greased and layered. You could you 1 big loaf tin or two 8x22cm).
5.      Leave it in warm place for another 30 minutes.
6.      Preheat the oven to 220 degrees.
7.      Before putting the tin to oven sprinkle the top of the dough with water.
8.      Reduce the temperature to 200 degrees and bake for 1 hour.

Homemade Baps




Homemade Baps


Ingredients:
380 g of flour
¾ cup of warm water
30 g of fresh yeast
3 tbs of olive oil
1 tsp of salt
½ tsp of sugar

1.      Mix together fresh yeast, warm water, sugar and 1 table spoon of flour. Combine it together and leave on the site for 15minutes.
2.      In a big bowl mix the rest of the flour, olive oil and salt and mix from point 1. Knead it for a while until dough is smooth, then cover the bowl with a clean towel and leave it in a warm place for 15 minutes.
3.      Divide the dough into small balls ( 4 if you want big baps, 6 for medium and 8 for small). Make a round, ball shape, wet it on top and sprinkle with the flour before putting on a baking tray layered with a baking paper.  Leave it aside for another 15 minutes.
4.      Meanwhile preheat the oven to 190 degrees.
5.      Bake the baps for approx. 20 minutes.

TURKEY MEATBALLS



TURKEY MEATBALLS

Ingredients:
Approx. 150g of turkey mince meat
1 carrot
1 small parsnip
Half of onion
Bunch of fresh dill
Egg yolk
4 tbs of rice
Marjoram, white pepper



1.       Boil the rice.
2.       Wash, peel and grate carrot and parsnip.
3.       Peel and chop the onion and dill.
4.       Mix all the ingredients together: boiled rice, turkey mince meat, grated carrot and parsnip, onion and dill and egg yolk. Add marjoram and pepper.
5.       Form medium size balls and fry them on pan, for approx.  5minutes.
