Poppy seeds cup cakes


Ingredients:
200 g poppy seeds
2 tbsp of sultans
1 tbsp of dried cranberries
2 tbsp of ground almonds
1 tbsp of grated orange skin
2 eggs
2 tbsp of flour
2 tbsp of honey or date syrup
1 flat tsp of baking powder

1.     Dried fruits cover with boiled water and leave it aside for 20 minutes.
2.     Poppy seeds cover with boiled water and leave to cool down. Then drain and blend with a hand blender.
3.     Separate egg yolks and whites. Add the yolks to the poppy seeds, then almonds, flour, baking powder, honey, dried fruits and orange peel. Mix it throughout.
4.     Beat the egg whites till them form spikes and add it to the mixture. Mix gently using a spoon.
5.     Transfer to cup cak for 20 minutes.es cases to ¾ its height.

6.     Bake in 190 degrees

YUMMY CRACKED CHOCOLATE BISCUITS



YUMMY CRACKED CHOCOLATE BISCUITS 

Ingredients:
225 g of dark chocolate
110 g of butter
2/3 cup of icing sugar
3 eggs
2 tsp of vanilla extract
½ tsp of baking powder
Pinch of salt
1 and 2/3 cup of flour
½ cup of icing sugar for decoration

1.      In a small pot heat up the butter until it becomes a liquid. Take of the heat and add broken pieces of dark chocolate. Mix it until all chocolate pieces dissolve. Cool it down.
2.     Separate egg whites from egg yolks. Beat the egg whites until it forms spikes, add the sugar (slowly spoon by spoon), then egg yolks and vanilla extract. Add the chocolate sauce from point nr 1 and mix it.
3.     Mix the flour with the salt and the baking powder. Add the chocolate mixture and mix throughout.  Cool down the mixture for a couple of hours in a fridge or leave it overnight.
4.     Take the dough out of the fridge and using tea spoon scoop the dough out. It will be difficult as the dough will be hard. Form small balls size of walnut. Cover it in the icing sugar and place on a baking sheet.
5.     Bake for 12 minutes in 165 degrees. 

·        The dough before baking must be hard and cold. This will make the biscuit crack. If you bake 1st part put the rest of the dough to the fridge.

Fisherman’s Pie



Fisherman’s Pie
For babies 6months +
Ingredients:
350g potatoes
150g of fish
25 g of frozen peas
25g of frozen sweetcorn
300ml of milk


1.      Peel the potatoes and cut them into small pieces.
2.      Fillet the fish – take the skin off and make sure there are no bones in the meat you are going to use.
3.      All of the ingredients place in a pot, bring it to boil and then simmer for 15 minutes.
4.      Puree before serving or leave it as it is.
