HEALTHY CHOCOLATE LOLLIPOPS
Ingredients:
125g soft butter
½ cup of brown sugar
2 eggs
1 tsp of baking powder
30g (1/4 of cup) cacao powder
100g Philadelphia soft cheese
2-3 tbsp of caster sugar
100g of dark chocolate
2 tsp of oil
ALSO plastic or paper sticks and shredded coconut/ ground
almonds/ rice krispies for decorations
STEP 1 – Bake a cake
1. MIX together butter
and sugar using an electric mixer. While mixing add each egg at a time.
2. Mix flour,
baking powder and cocoa together. Add it gently spoon by spoon to butter, sugar
and eggs mix.
3. When all the
ingredients blend together transfer it to a round tin approx. 20cm wide and
bake in preheated oven for 25min in 180 degrees.
4. When cake is
baked take it out of the oven and cool it down.
STEP 2 – Making the lollipops
1. When cake is
cool break it to pieces and transfer to a blender and blend.
2. After blending
transfer to a bowl and mix together with Philadelphia cheese and caster sugar.
You could mix it all together in the blender if you want.
3. Knead the dough;
if it’d dry you can add some more Philadelphia cheese.
4. Form small
bowls, around 3cm wide. Keep then on baking paper and under the baking foil in
fridge for at least 4h.
5. Melt chocolate
with an oil in water bath.
6. Dip the end of
each stick in warm chocolate and then stick each stick to each chocolate bowl.
7. When all done
keep it in fridge for another 30minutes.
8. After 30min
dip each bowl in still warm chocolate and while still warm decorate with your
choice of decorative. You can use healthy options like me, which is shredded
coconut, ground almonds and rice krispies.
9. Leave it for
10min for chocolate to cool down.
10. Enjoy with
your child!!
