Millet cookies



MILLET COOKIES

Ingredients:
250g millet flour
150g cornflour
200g desiccated coconut
200g ground almond
4 tbsp of potato starch
250g of soft butter
150ml of plain yoghurt
1 tsp of baking powder
Sugar for topping

1.       Preheat your oven to 200 degree Celsius.
2.       All the ingredients mix together in a bowl.
3.       Soft dough transfer to a plastic bag and rest in a fridge for 30 minutes.
4.       Line a baking tin with a baking paper covered with margarine, so the cookies won’t stick to it.
5.       Take the dough out of fridge and form little balls and then squash a bit to form a cookie shape. Give them a bit of space in the tin, as they’ll expand while baking (approx. 3 cm apart). If you want you can use a fork to make a design on them. Sprinkle with a bit of sugar.
6.       Bake until golden brown. When ready take out of the oven and let them rest, as they get hard.
7.       Cool them down and enjoy!
